The lush Assam valleys of India’s Brahmaputra river offer a rich and fertile terroir for tea bushes to flourish. Blessed with a tropical, rainy climate, and protected to the north by the Himalayas, the greenhouse-like conditions in Assam make it one of the most successful tea growing regions in the world. Assam’s tea bushes are harvested across four picking seasons between March and December. Known as ‘flushes’, each of these harvests offers teas of different character. For this blend, we only select teas from the second flush in the late spring, when the leaves offer the perfect balance of fresh taste and malty richness. The leaves are hand-picked, with just the precious top two leaves and the bud ‘tip’ being carefully plucked with each pass.
Once the tea leaves are picked, the skill of the Tea Master is vital in transforming them quickly into high quality tea. The leaves and buds go through a gentle bruising and withering process to encourage their oxidation stage – when they turn from lush green to the familiar dark brown colour. The Tea Master must carefully control this stage, which tends to happen through the night when the temperatures are cooler. Next, the leaves are rolled to release their precious inner juices, before the all-important drying and grading stages ‘fix’ the tea and lock in its flavours and aromas, to be released again once they’re steeped in your pot/cup.
For this blend, our Tea Masters select a premium grade of tea called ‘GFBOP’ (Golden Flowery Broken Orange Pekoe) which includes larger leaf pieces and whole golden tips. There are also some smaller broken pieces that release their flavours a little faster – helping to give a deliciously balanced brew. This Assam steeps into a bright, glistening copper coloured liquor with gorgeous aromas of freshly baked biscuits and dark malt. We recommend brewing it strong and serving with a dash of milk. A spoonful of sugar brings out the tea’s natural sweetness when a more indulgent cuppa is preferred.
